Crispy Roasted Masala Makhana at Home (10-Minute Recipe)
The ultimate 10-minute stovetop snack: crunchy popped lotus seeds tossed in warm ghee, turmeric, chaat masala, and Kashmiri red chili.

Ingredients
Ingredients
- 3 cups (60g) High Quality Phool Makhana / Lotus Seeds
- 1 teaspoon Cold Pressed Olive Oil, Mustard Oil, or Cow Ghee
- 1/2 teaspoon Kashmiri Red Chili Powder (for vibrant color & gentle heat)
- 1/4 teaspoon Haldi (Organic Turmeric Powder)
- 1/2 teaspoon Chatpata Chaat Masala
- 1/4 teaspoon Roasted Cumin (Bhuna Jeera) Powder
- 1/2 teaspoon Black Salt (Kala Namak) or Pink Salt
Step-by-Step Instructions
Dry Roast the Fox Nuts
Place a wide, heavy pan on low flame. Add the makhana and dry roast continuously for 5–6 minutes. To test readiness, pick a makhana and crush it between two fingers—it should snap cleanly with an audible crunch rather than feeling chewy.
Bloom Spices in Warm Oil/Ghee
Push the makhana to one side of the pan. In the center, add 1 tsp of ghee or cold-pressed oil. Immediately sprinkle the turmeric, chili powder, chaat masala, roasted cumin, and black salt into the warm fat for 5 seconds to bloom their essential aromatic oils.
Toss and Coat Evenly
Immediately toss the roasted makhana into the spice mixture, tossing vigorously for 1 minute until every single lotus seed is evenly dusted in vibrant golden-red seasoning.
Cool and Store
Turn off the heat and let the makhana cool completely for 5 minutes. The crunch intensifies as it cools. Store in an airtight glass jar for up to 3 weeks.
